Holy cow. I am SO done with canning this season. It all started with the picture I took and blogged 3 weeks ago. That same weekend, I made 1 batch of (hot) salsa with some, and put the rest of the peeled, cut up tomatoes in my fridge. Well, they waited until I was done with tending nearly 2 weeks later. Thank goodness they didn't spoil. By that time, we got another 2 batches of tomatoes from our garden. Needless to say, they were coming out my ears. I decided today was the day. I didn't even change out of my pj's. I worked on them all day. I just ended up canning the ones from my fridge as petite diced tomatoes. With the new tomatoes, I wanted to try a different recipe for salsa (didn't care too much for the first one). Long story short, I worked on tomatoes and the salsa until 10:00 p.m. I did take a 2 1/2 hour break to teach piano lessons. I am finished with canning for the season ... possibly longer. The salsa didn't even turn out super good. So, unless someone has the ultimate recipe that is beyond yummy, I won't be doing salsa again for a few years.

I am so with you on the canning! I bought 25 lbs of tomatoes and went nuts on the salsa. I'm beat. I want to go to bed.
